20 pieces of bacon
20 large scallops
¼ red pepper
20 wood skewers
salt & pepper


Clean pepper and cut into small dice and set aside for later.
Heat sauté pan add bacon.
Turn to medium and allow to cook slowly.
Heat another sauté pan and add a little oil.
Toss the scallops into a mixing bowl with oil and a little salt & pepper.
Cook scallops on each side 2-3 minutes until slightly translucent.
Remove from sauté pan.
Clean and dice red pepper.
Set aside.
When the bacon is done, drain on paper towels.
Wrap a slice of bacon around a scallop and then poke skewer through this.
Sprinkle with diced red pepper and serve.
