1 pound of penne pasta
4 breast of chicken
1 tablespoon diced garlic
½ head broccoli
½ red pepper
¼ cup green peas
2 teaspoons capers


Preheat oven to 350 degrees.
Heat grill on stove top.
Clean and slice chicken breasts in half.
Toss in olive oil, garlic, salt and pepper.
Grill for 2-3 minutes on each side.
Set grilled chicken onto a clean sheet pan.
Place in preheated oven for 5-7 minutes on each side to cook through.
Meanwhile, boil water add salt and penne.
Cook al dente 7-8 minutes.
Your time may vary.
In small sauce pan, boil water and blanch broccoli for 1 minute.
Run under cold water.
Clean and dice red pepper.
Drain pasta.
Remove chicken from oven and let cool, then cut into strips.
In large mixing bowl toss all ingredients adding the garlic and capers last.
For pasta salad to mix better add a little olive oil.
