2 lbs chopped meat
1 lb fresh bread
3 eggs
½ cup grated parmigiano cheese
3 tablespoons of freshly chopped parsley
2 tablespoons of chopped garlic
1 teaspoon of salt
½ teaspoon of pepper
olive oil


Preheat oven to 350.
Soak bread in water and squeeze dry.
In large mixing bowl whisk egg, add meat, bread crumbs, parmigiano cheese, garlic, salt and pepper.
Chop parsley and add it in.
Wash hands and start mixing.
It will take a couple of minutes to mix this well. Heat pan and add a ¼ inch of oil to the pan.
Take pieces about the diameter of a quarter and roll them into little balls and set on a sheet pan.
When you’re finished rolling the meat balls, fry them turning frequently so they brown on all sides.
Place directly onto a sheet pan at put into the oven for 5-8 minutes to allow to cook through.
Makes about 40 meatballs.
