1 Italian loaf
3 oz. cream cheese
1 oz. sour cream
2 scallions
salt & pepper


Preheat oven to 350.
Cut bread into ¼ inch slices and drizzle with olive oil.
Place bread on sheet pan and put into the oven for 5-7 minutes until they crisp and begin to brown lightly.
Meanwhile take the cream cheese out to room temperature and put into a mixing bowl add sour cream.
Chop the root end from the scallion, discard.
Run scallions under water and pat dry with paper towels.
Dice them and add them to the cheese and cream mixture.
With electric mixer, mix on high add salt and pepper to taste.
Lay toasted bread on cutting boar and spread a little of the scallion cream cheese on the toasted bread (crostini).
Top with a slice of salmon.
If salmon slices are too large for the bread, slice them in half and place on top of the bread.
Top with a little more of the scallion cream cheese.
Makes 20-30 hors d’oeuvres.
