Ingredients
20-25 pieces crostini
1 Mike’s Deli homemade smoked mozzarella
1 roasted red pepper
1 Italian loaf bread
olive oil
salt & pepper

 

Directions
Preheat oven to 350. On cutting board slice Italian loaf into ¼ inch pieces, drizzle with oil, salt and pepper.
Place on sheet pan and put in oven for 5-7 minutes or until the bread crisps and becomes lightly browned.
Set aside.

They are two ways to make these peppers. The first is in the oven the other is to grill them on top of the stove.
1) Preheat the oven to 400.
Toss the pepper in a little olive oil and place the pepper on sheet pan, put in the oven.
You have to watch this closely.
Once it turns brownish black on one side turn it into the next.
Repeat on all four sides.
Once finished remove from the oven and place in a clean mixing bowl wrap with plastic and allow to sweat.
Once it has cooled, unwrap, peel discard stem and any seeds.
2) If you have a well ventilated kitchen and good exhaust system heat grill on top of the stove put pepper onto the grill and char.
Do this on all four sides.
Put in mixing bowl and allow it to sweat, once cooled unwrap peel discard stem seeds.

Place crostini on cutting board, slice mozzarella as thick as desired, put cheese on top of crostini and top with a strip of the roasted pepper.
