Ingredients
1 pound of rigatoni
1 pound of Mike's Deli ricotta
½ cup of grated parmigiano cheese
2 egg yolks
2 tablespoons parsley
olive oil
salt & pepper

 

Directions
Preheat oven to 350 degrees.
Boil water for pasta in sauce pan adding salt to water.
Cook for about 5-6 minutes and drain.
It will be under cooked but you will be cooking it again.
While pasta is cooking, break eggs into a mixing bowl add both cheeses the chopped parsley and salt and pepper.
Add undercooked pasta to the mixing bowl.
Toss all ingredients together mixing thoroughly.
Grease small roasting pan or casserole and add the pasta.
Cook covered with foil for 25 minutes, then uncovered for another 5-10 minutes until the cheese on top browns lightly.
