1 pound of swordfish steak
4 oz. sour cream
1 teaspoon hot sauce
1 basket cherry tomatoes
½ teaspoon ground coriander
1 teaspoon white vinegar
20 skewers


Put wood skewers in water bath for 10 minutes.
Allow to soak.
Open sour cream drain any surface liquid.
Put into mixing bowl with next four ingredients.
Mix and set aside.
Heat sauté pan and add a little oil.
Cut swordfish into 1x4 inch rectangles.
In bowl season with salt and pepper, olive oil.
Put swordfish in pan and cook for 40 seconds on each side, for medium rare, longer for well.
Remove from pan, allow to cool.
Cut swordfish into 1x1 inch cubes.
Skewer a piece of swordfish then a tomato and 1 more piece of fish.
Dip into the coriander sauce.
