1 pound veal escallops
½ pound fontina cheese
¼ pound thinly sliced Mike’s Deli imported prosciutto
4 eggs
olive oil
salt & pepper


Preheat oven to 350.
Put shall sauté pan on add eggs and 1Qt of water.
Turn heat to high let water reach a boil when eggs have boiled 2-3 minutes they are done.
Remove from the stove.
Heat sauté pan add ¼ inch oil to the pan.
Fry veal for 2-3 minutes on each side.
Drain on paper towels, the set escallops on a sheet pan top with a little Fontina cheese and a slice of prosciutto.
Set aside.
Roll cooked egg under palm of hand on flat surface this will crack shell while keeping it in place.
Discard egg shells.
Slice egg in ¼ inch coins.
Put a little more cheese on top of the prosciutto and then place one piece of egg on top pf that.
Put veal in oven for 8-10 minutes to allow veal to cook through and cheese to melt.
